Coconut is traditionally known for its toddy or sap which when fermented,   become wine or what is known to Filipinos as “Tuba”. A new discovery showed that not only wine can be produced from coconut sap. Coconut sugar, a newly discovered product made up of coconut sap, is creating a demand in the coconut industry. It is 100% natural and serves as a healthier alternative for synthetic sweeteners to health conscious and diabetic consumers. The test done by the Food and Nutrition Research Institute and Department of Science and Technology of the Philippines in 2007 revealed that coconut sugar has a low glycemic index (GI) of 35. Glycemic index is the measure on how rapidly a particular carbohydrate turns into sugar. Low GI is said to be good for proper control of diabetes mellitus, reducing bad cholesterol, and for weight maintenance.
